A breakthrough infection produces a big kick to the immune system. But the key to this is "what doesn't kill you". It wouldn't be great if you ended up dying, so doctors aren't keen on the idea of the fully vaccinated hosting "pox parties" with a view to boosting their immunity. but if it happens in the ordinary course of events, it's like winning Tatts.
